Desserts, such as this recipe for apple cream, were a lot different back in the day than they are now. This particular recipe was published during World War 1.
Apple Cream
Strain 1 cup of apple sauce through a sieve, add to it a tablespoon of lemon juice, a little grated lemon rind, a pinch of salt, sugar to taste, and the unbeaten whites of three eggs.
Beat with a whisk until it is stiff enough to hold its shape.
Chill thoroughly and serve with whipped cream.
